01. Complex Yeast Blend
A unique combination of one distiller's yeast and two brewer's yeasts ensures a nuanced profile, producing vibrant esters and alcohols that set the stage for this whisky's rich complexity.
02. Narrow Spirit Cut
We employ one of the smallest spirit cuts in the industry, capturing only the finest fruity and citrusy notes during distillation. This ensures a perfect synergy with the oak casks, delivering a spirit brimming with green fruits, citrus, and subtle olive oil tones.
03. Sherry Casks
This whisky rests exclusively in a single first-fill European oak cask, as a one of one whisky. Casks are sourced from renowned Spanish cooperages Tevasa and Jose y Miguel Martin. These casks imbue the spirit with layers of rich, nutty, and spicy complexity essential for its signature depth and colour.
